
I had 2 chicken breasts and 4 chicken legs that needed to be cooked, a 4-pack of bell peppers (red and orange), a couple of onions, half a bulb of garlic, cilantro that was on its way to wilting, and a cupboard full of spices. No other veggies or herbs (not even green onions). And no ideas. And very much wanted to avoid the oven. So I turned to the internet. I love food blogs. Chicken, bell peppers and onions cooked two different ways. I used chicken breast for the curry and chicken legs (thighs and drumsticks) for the stew. They were both quite tasty, especially the curry one. Sorry for not taking pictures of the plated curry dish. Each recipe made enough to feed 2 people for dinner and pack as a hearty lunch the next day. NOTE: The curry was very runny, so I thickened it with a bit of cornstarch. I might do the same with the stew as well, since it was very soupy.
