All pasta-ed out & need new ways to use pasta sauce? Runny yolk spicy sauce rice = heaven. #cookingathome

Shakshuka inspired dinner: I have a surplus of store-bought pasta sauce and was looking for easy non-pasta and non-pizza recipes to use them in. An online search resulted in disappointingly few recipes that did not require the oven. One promising idea came from a Chowhound thread that suggested using leftover meat sauce to make shakshuka. It's basically eggs poached in a spicy tomato sauce. I came across recipes for shakshuka months ago but dismissed them as too much work for one meal at home. My pan isn't big enough to cook two meals' worth of food and poached eggs don't make for good leftovers, nor do they reheat well in the microwave. Being able to cheat with pasta sauce, however, changes my outlook entirely. If you know me, then you know I treat recipes as merely suggestions on what things go together. I also didn't have all the ingredients to actually make shakshuka so I improvised. Aside from pasta sauce, I had ground chicken in the freezer that I needed to use, cilantro that was going to waste in the fridge, onions, garlic and lots of eggs. Add some sriracha, ground cumin and ground coriander for spice, and it becomes a pretty decent meal. Instead of bread, I served it over rice. Runny egg yolk, spicy sauce and rice are a match made in heaven. I'm precise when I bake but don't bother to measure anything when I cook, so I can't really give you a recipe for what I made. Besides, this was a quick and easy cheat version: Veggies and meat (if any) goes in the pan first, then the spices and enough pasta sauce to hold the eggs (about a 1 inch layer seems good). Play around with spices to see what works for you; taste the sauce as you cook and you'll get a feel for how much to put in. When you like the sauce, add the eggs.
